PANETTONE
Our panettone is made using the traditional Milanese method. Two doughs over three days using lievito madre – a stiff, naturally leavened starter maintained specifically for Italian sweet breads.
We use uncultured butter from Ampersand Dairy, specially made for us so it doesn't interfere with the fermentation process. Each panettone contains candied apples picked from forgotten orchards in Cornwall – a mix of cooking and cider apple varieties that we candy ourselves. The buckwheat praline is made in-house, combining toasted buckwheat, caramelized sugar, and olive oil.
The result is super light and buttery, with a delicate crumb that comes from the slow, three-day fermentation process.
Each panettone weighs 500g.
